From the small country of El Salvador, Bigler came to seek opportunities in the US. Immediately immersed into Asian cuisine, he quickly recognized his love of sushi and seafood. He now has 18 years of sushi chef experience. When moving to Austin TX, he began work at the well known Uchi. He continued work with them as head sushi chef in their Houston location. From there, he met the owners of Golfstrømmen. He helped their concept, as the chef de cuisine, grow to the number one restaurant in Houston. Using the intricacies of various cuisines and techniques he has branched out to his own path using the passion for creating exceptional food that tells a story.

His mission is to invite diners to look beyond their day-to-day environments, to savor the unfamiliar, and to embrace the rich tapestry of flavors and cultures that make up the culinary world. Bigler's dream is to create a space where every meal was an opportunity for people to explore, learn, and connect with the world through their taste buds.
